Did you know you can make an entire meal using just potatoes? That’s right ─ this humble spud can be the start of the show! And what better way than with Roasted garlic mashed potatoes recipe?
We are talking velvety smooth potatoes, rich roasted garlic, and a buttery, creamy finish that melts in your mouth, sounds irresistible right?
Well, Founder and Executive Chef at The Gourmet Arch, Thabitha Mogale, is sharing her secret recipe, and trust us─you will never see mashed potatoes the same way again!
How to make a Roasted garlic mashed potatoes

Ingredients:
- 1 garlic bulb
- 1 tablespoon olive oil
- 6 medium potatoes, peeled and cubed
- Salt and Pepper
- 100g butter, cubed
- 80 ml cream
- A sprig of fresh rosemary
- 3 tablespoons mayonnaise
- 2 tablespoons Parmesan cheese, grated
- 1 tablespoon fresh parsley, chopped (to garnish)
Method:
1. Preheat oven to 375 degrees.
2. Take your garlic bulb and peel off any extra skin, leaving only the outer layer of skin to keep everything intact.
3. Cut the top of your garlic bulb and place it onto a foil sheet. Drizzle olive oil over it and enclose it tightly. (As depicted below)
4. Roast in the oven for 30-40 minutes or until the outside is golden brown and the inside is soft.
5. Remove from oven and set aside to cool.
6. In a large pot over medium high heat, place potatoes with sprig of rosemary and cover with cold water. Season with salt and bring to a boil until potatoes are fork tender.
7. Once the water has simmered down and the potatoes start to sizzle, remove the sprig of rosemary.
8. Turn the heat down to medium low and add half of the cubed butter then stir until melted.
9. Squeeze all of the roasted garlic into the potatoes and add cream.
10. Using a masher, mash the potatoes to your preferred consistency. Finish with the remaining butter, mayonnaise, Parmesan cheese and adjust salt and pepper.
11. Stir until evenly combined and butter has melted.
12. Remove from heat and transfer to a serving dish.
13. Top with chopped parsley and enjoy
Notes:
- You can make your roasted garlic mashed potatoes cheesy by adding grated cheddar cheese and more Parmesan cheese.
- If the consistency of your mashed potatoes is not smooth enough, add a little bit of cream or full cream milk.
- Thabitha added one sprig of rosemary in the cooking process to enhance flavour, just enough for it not to overwhelm the garlic.
- Mash is best served with proteins or stews.
