From roasted bell peppers and juicy cherry tomatoes to earthy mushrooms and a hint of a basil, every bite is a warm and comforting embrace.

This recipe is the perfect way to switch things up while still indulging in something absolutely delicious.

Ingredients:

For the dough:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 packet (7g) instant yeast
  • ¾ cup warm water

For the pizza sauce:

  • 1 cup canned tomato puree
  • 1 teaspoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sugar

For the toppings:

  • 1 ½ cups shredded mozzarella cheese (or a dairy-free alternative)
  • ½ cup cherry tomatoes, sliced
  • ½ cup mushrooms, sliced
  • ½ cup bell peppers (red, yellow, or green), thinly sliced
  • ¼ cup black olives, sliced
  • ¼ cup red onion, thinly sliced
  • 1 handful fresh basil leaves
  • ½ teaspoon dried oregano
  • Olive oil for drizzling

Method:

1. Prepare the Dough: In a bowl, mix warm water, sugar, and yeast. Let it sit for 5–10 minutes until foamy. Add flour, salt, and olive oil, then mix until a dough forms. Knead for 8–10 minutes until smooth. Cover and let it rise in a warm place for about an hour or until doubled in size.

2. Prepare the Sauce: Heat olive oil in a pan and sauté minced garlic for 30 seconds. Add tomato puree, oregano, basil, salt, pepper, and sugar. Simmer for 5–7 minutes, then set aside.

3. Assemble the Pizza: Preheat oven to 220°C. Roll out the dough into a thin circle and place it on a pizza tray. Spread an even layer of pizza sauce over the dough. Sprinkle mozzarella cheese and arrange the toppings over the pizza. Drizzle lightly with olive oil and sprinkle dried oregano.

4. Bake the Pizza: Bake for 12–15 minutes, or until the crust is golden and the cheese is bubbling. Remove from the oven and garnish with fresh basil leaves.

5. Serve & Enjoy: Slice and serve hot with your favorite dipping sauce or a side salad.
