Ingredients for the recipe
- 1 loaf of French baguette or ciabatta
- 4-5 ripe tomatoes (Roma or vine-ripened)
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil (plus extra for drizzling)
- 1 tablespoon balsamic vinegar
- Salt and pepper, to taste
- Optional: 1/4 cup grated Parmesan cheese
Method
- Prepare the tomatoes: Wash the tomatoes, remove the stems, and chop them into small cubes. Place them in a mixing bowl.
- Season the tomatoes: Add the minced garlic, fresh basil, balsamic vinegar, olive oil, salt, and pepper to the tomatoes. Mix everything gently to combine, ensuring the tomatoes are evenly coated in the seasoning. Let it sit for about 10 minutes to allow the flavours to blend.
- Toast the bread: Slice the baguette or ciabatta into 1-inch thick slices. Brush each slice lightly with olive oil. Toast the slices in a preheated oven at (190°C) for about 8-10 minutes or until they are golden and crispy. You can also toast them on a grill or in a skillet for extra flavour.
- Assemble the bruschetta: Once the bread is toasted, remove it from the oven and allow it to cool slightly. Spoon the tomato mixture generously onto each slice of toasted bread.
