Mondays can feel a bit slow, so I like to make meals that are quick, simple, and still satisfying.
This Chicken Wrap is one of my favorites to start the week with—it’s easy to throw together, packed with flavour, and works whether I need a speedy lunch or a light dinner. I usually make it with whatever fresh veggies I have on hand, and the best part is, it never feels boring. It’s the kind of meal that makes me feel like I have got my life together—even if it’s just Monday.
How to make Homemade Chicken Wrap
Serves: 2
Ingredients:
- 2 large tortilla wraps (plain or whole wheat)
- 1 chicken breast (sliced into strips)
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- Salt & black pepper to taste
- ¼ cup mayonnaise (or plain Greek yogurt)
- 1 teaspoon lemon juice
- 1 cup lettuce (shredded)
- ½ cup cucumber (sliced into thin strips)
- ½ cup tomato (diced or sliced)
- ¼ cup grated cheese (optional)
Method:
- Cook the Chicken: Heat olive oil in a pan over medium heat. Season chicken with paprika, garlic powder, salt, and pepper. Cook for 6–8 minutes, flipping occasionally, until golden brown and fully cooked. Remove from heat.
- Prepare the Sauce: Mix mayonnaise (or yogurt) with lemon juice. Adjust with a pinch of salt and pepper if needed.
- Assemble the Wrap: Warm the tortilla wraps slightly (in a dry pan or microwave for a few seconds).
Spread the sauce down the center of each wrap. Add shredded lettuce, cucumber, and tomato. Place the cooked chicken strips on top. Sprinkle cheese if using. - Wrap It Up: Fold the sides of the tortilla inward, then roll it tightly from the bottom up.
- Serve: Slice in half (optional) and enjoy immediately.
Variations:
*Add avocado slices or guacamole for creaminess.
*Swap mayo for hummus for a healthier twist.
*Add a dash of chili sauce or sriracha for heat.
