How to make a Lekker Peach Padkos
Ingredients:
- 4 ripe but firm peaches (yellow or white)
- 1 tbsp honey (or maple syrup)
- ½ tsp ground cinnamon
- A small squeeze of lemon juice
- ½ cup mixed nuts (almonds, cashews, pecans, or peanuts)
- ½ cup dried cranberries or raisins
- Optional: ¼ cup shredded coconut or granola clusters
Method:
- Prep the peaches: Wash and slice the peaches into wedges (leave the skin on for extra fiber and easy handling). Toss the slices in a bowl with honey, cinnamon, and lemon juice to keep them fresh and zesty.
- Roast or keep fresh (your choice):
Fresh version: Pack the honey-cinnamon peaches as they are.
Roasted version: Spread the slices on a baking sheet, bake at 180°C for 15–20 minutes until slightly caramelised, then let them cool. - Mix your padkos snack pack: Combine the peaches with nuts, dried cranberries/raisins, and coconut or granola. Portion into small containers or zip bags for easy road-trip snacking.
Tips:
*If you are driving far, freeze the peach slices the night before — they will thaw slowly and stay cool.
*Swap peaches for nectarines or apricots if you like.
*You can add a few cubes of cheese or biltong on the side for a savoury balance.
