Today’s meal is something that warms both the heart and the belly — a Beef stew & spinach curry that’s simple, soulful, and full of flavour.

How to make a Beef stew and spinach curry
Ingredients:
- 500g beef stewing meat (cut into bite-sized chunks)
- 2 tbsp cooking oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 tsp grated ginger (optional but recommended)
- 2 medium tomatoes, grated or blended
- 2 tbsp tomato paste
- 1½ tsp curry powder
- ½ tsp turmeric
- ½ tsp paprika
- ½ tsp ground cumin (optional for depth)
- 1½ cups beef stock or water
- 1 cup chopped spinach
- Salt and black pepper to taste
- Fresh coriander or parsley for garnish
Method:
- Brown the beef: Heat oil in a pot, add beef, and sear until browned on all sides. Remove and set aside.
- Build your base: In the same pot, sauté onion until golden. Add garlic and ginger, stirring for 30 seconds.
- Add spices: Stir in curry powder, turmeric, paprika, and cumin. Cook the spices gently for about 1 minute to release their aroma.
- Create the sauce: Add tomatoes and tomato paste. Cook until the mixture thickens and the oil begins to separate from the sauce.
- Simmer the stew: Return beef to the pot, pour in stock or water, season with salt and pepper. Cover and let simmer for 45–60 minutes (or until beef is tender). Add a bit more water if it thickens too much.
- Add spinach: Stir in chopped spinach and cook for another 5–7 minutes until it wilts and blends into the sauce.
- Taste and finish: Adjust seasoning, garnish with coriander or parsley, and serve hot.
