We are inching closer to the weekend, and I don’t know about you, but I’m feeling extra grateful today.

No weather complaints, no rush — just a quiet moment to appreciate the gift of a new day, the roof over our heads, and the food we get to cook and share.

Today’s meal is something that warms both the heart and the belly — a Beef stew & spinach curry that’s simple, soulful, and full of flavour.

Let’s take a moment, breathe it all in, and then get cooking together.

How to make a Beef stew and spinach curry

Ingredients:

  • 500g beef stewing meat (cut into bite-sized chunks)
  • 2 tbsp cooking oil
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp grated ginger (optional but recommended)
  • 2 medium tomatoes, grated or blended
  • 2 tbsp tomato paste
  • 1½ tsp curry powder
  • ½ tsp turmeric
  • ½ tsp paprika
  • ½ tsp ground cumin (optional for depth)
  • 1½ cups beef stock or water
  • 1 cup chopped spinach
  • Salt and black pepper to taste
  • Fresh coriander or parsley for garnish

Method:

  1. Brown the beef: Heat oil in a pot, add beef, and sear until browned on all sides. Remove and set aside.
  2. Build your base: In the same pot, sauté onion until golden. Add garlic and ginger, stirring for 30 seconds.
  3. Add spices: Stir in curry powder, turmeric, paprika, and cumin. Cook the spices gently for about 1 minute to release their aroma.
  4. Create the sauce: Add tomatoes and tomato paste. Cook until the mixture thickens and the oil begins to separate from the sauce.
  5. Simmer the stew: Return beef to the pot, pour in stock or water, season with salt and pepper. Cover and let simmer for 45–60 minutes (or until beef is tender). Add a bit more water if it thickens too much.
  6. Add spinach: Stir in chopped spinach and cook for another 5–7 minutes until it wilts and blends into the sauce.
  7. Taste and finish: Adjust seasoning, garnish with coriander or parsley, and serve hot.

Best served with:

  • Fluffy rice
  • Creamy pap
  • Warm rotis or steamed bread
