That’s exactly the vibe behind my Savory Sweetcorn & Cheese Mini Fritters. And the best part? These little bites of joy work any time of the day—breakfast, lunch, or a midnight snack!
Whenever I need something quick and tasty, these fritters are my go-to. So grab a comfy seat, relax, and cook along with me as we whip up one of my favourite feel-good treats.
How to make Savory sweetcorn & cheese mini fritters
Ingredients:
- 1 cup sweetcorn kernels (fresh, canned, or frozen)
- ½ cup grated cheddar cheese
- ½ cup self-raising flour
- 1 egg
- 2 tbsp milk (or water)
- ½ small onion, finely chopped
- ½ tsp mixed herbs (or dried parsley)
- Salt and black pepper to taste
- 1 tbsp cooking oil (for frying)
Optional:
- A pinch of chilli flakes for heat
- Fresh coriander or parsley for garnish
Method:
- Prepare the Batter: In a medium bowl, whisk the egg and milk together. Add the flour and stir until smooth.
- Add the Flavour: Mix in the sweetcorn, grated cheese, chopped onion, herbs, salt, and pepper. Stir gently until all ingredients are evenly combined. The batter should be thick but spoonable — add a splash more milk if too stiff.
- Cook the Fritters: Heat oil in a non-stick pan over medium heat. Spoon small rounds of batter (about 2 tablespoons each) into the pan. Flatten slightly with the back of the spoon and cook for 2–3 minutes per side, until golden brown and crisp.
- Serve Hot or Cold: Enjoy them fresh off the pan with a dip like sweet chili sauce, plain yogurt, or guacamole — or store them in an airtight container to snack on later.
