Let’s pause for a second, take a deep breath, and just soak in this beautiful day.
Now… if I’m being completely honest with you (and you know I always keep it real), today I am not feeling that whole “chef mode” energy. Nope. The thought of chopping a mountain of veggies and mixing a dozen ingredients? Yeah… not today. I’m a little tired, and maybe you are too?

Well, I have got us covered either way. Because today’s recipe is made to match any mood — my Creamy Chicken & Spinach Toast Pockets!
I actually created this one with you in mind. Be it you are buzzing with energy or running on low, I never want to leave you behind when it comes to good food and good vibes.

How to make Creamy chicken & Spinach toast pockets
Ingredients:
- 2 slices of bread (white or brown, crusts removed)
- ¼ cup cooked shredded chicken (leftover or freshly made)
- 1 tablespoon cream cheese (or mayo if you prefer lighter)
- A small handful of fresh spinach leaves, chopped
- ½ teaspoon garlic powder (or a tiny pinch of crushed garlic)
- Salt and pepper to taste
- 1 tablespoon butter (for toasting)
Optional:
- Grated cheese for extra richness
- A few chilli flakes if you like a little heat
Method:
- Make the Filling: In a small bowl, mix the shredded chicken, cream cheese, spinach, garlic, salt, and pepper. Stir until creamy and well combined.
- Assemble the Pockets: Take your bread slices and gently flatten them with a rolling pin (or the back of a spoon). Spoon some of the filling onto one slice, leaving space at the edges. Place the second slice on top and press the edges together using a fork to seal.
- Toast Them Golden: Heat a little butter in a non-stick pan over medium heat. Toast your pockets for 2–3 minutes per side until golden, crisp, and slightly melty inside.
- Serve & Enjoy: Slice them in half (diagonally if you’re feeling fancy) and enjoy warm. Perfect with a cup of tea, juice, or even as a light lunch with a side salad.
