Well, Fam, I have got an idea — and it’s warm, crispy, and comforting: Crispy Cubed Potato & Herb Bites.
I know, I know… not everyone is a potato fan, but trust me — you might want to give this one a try.

How to make Crispy cubed potato & herb bites
Ingredients:
- 2 medium potatoes, peeled and cubed into small pieces
- 1 tablespoon flour (any type)
- 1 egg
- 1 tablespoon chopped fresh herbs (parsley, coriander, or spring onion)
- Salt and black pepper to taste
- Oil for shallow frying
Optional:
- A pinch of paprika or chilli flakes for a little kick
- Grated cheese for extra flavour
Method:
- Prep the Potatoes: Boil the cubed potatoes for about 5 minutes — just until slightly soft but not mushy. Drain and let them cool a bit.
- Mix It All Together: In a bowl, gently mix the potatoes with flour, egg, herbs, salt, and pepper. Stir until the cubes are lightly coated and hold together when pressed.
- Shape & Cook: Heat oil in a non-stick pan over medium heat. Scoop small spoonfuls of the mixture into the pan and flatten them slightly. Fry for 2–3 minutes per side until golden brown and crisp.
- Serve & Enjoy: Drain on a paper towel, sprinkle a touch of salt, and serve warm with your favourite dip — like garlic mayo or tomato sauce.

*For a little twist, toss the cooked bites in a touch of honey and chilli flakes after frying for a sweet-and-spicy finish.
