Fam, gather around for a second—because can someone explain to me how the calendar is already shouting 12 December, 2025?

Like, excuse me? This year is zooming by as if it’s trying to unlock some hidden speed achievement. I swear 2025 has been pressing fast-forward on us since January!

But anyway… how are you doing today, my beautiful fam? I always get this tiny nervous flutter when I ask—I don’t know why—but love turns us into brave little weirdos, doesn’t it? We ask, we care, we show up… all because the heart is out here doing the absolute most. Hahaha!

And since December is already sprinting ahead, I’m not going to beat around the bush today. We need food. We deserve food. And not just any food—something simple, bright, nutritious, and so delicious it might make you do a happy little shoulder shake.

So today, my fam, we are making: Mango–Lime Chicken Skillet. A vibe. A moment. A whole celebration in one pan.

How to make Mango–Lime Chicken Skillet

Serves: 2–3

Ingredients:

  • 2 chicken breasts, sliced into strips
  • 1 ripe mango, diced
  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Juice of 1 lime
  • 1 tablespoon honey
  • Salt & pepper to taste
  • Optional garnish: fresh coriander or parsley

Method:

  1. Cook the chicken: Heat olive oil in a pan. Season chicken strips with garlic powder, paprika, salt, and pepper. Sear until lightly golden and cooked through.
  2. Add aromatics: Add the sliced red onion and sauté until soft and fragrant.
  3. Add the mango: Stir in the diced mango and let it soften slightly so it creates a natural “sauce.”
  4. Finish with brightness: Add honey and lime juice. Let everything bubble for 1–2 minutes until glossy.

Serve with:

  • Rice
  • Couscous
  • Wraps
  • A simple salad
  • Or on its own as a warm bowl
