Now, since it is Christmas Eve, we are obviously celebrating. Today’s treat is Honey-Roasted Banana & Peanut Crunch Cups — simple, comforting, and seriously tasty.
Let’s be honest, tomorrow is all about the big meals and full plates, so today we are just vibing, enjoying the moment, and making something sweet without any stress.

How to make Honey-Roasted Banana & Peanut Crunch Cups
Serves: 2–3
Ingredients:
- 3 ripe bananas
- 2 tbsp honey
- 1 tbsp butter or coconut oil
- ½ tsp cinnamon
- A pinch of salt
- ¼ cup roasted peanuts (roughly crushed)
- 2 tbsp dark chocolate chips or chopped chocolate
- 1–2 tbsp plain yoghurt or whipped cream (optional, for topping)
Method:
- Slice the bananas into thick rounds.
- Heat a pan on medium and melt the butter or coconut oil.
- Add the bananas, drizzle over the honey, sprinkle cinnamon and salt.
- Let them roast gently, turning once, until golden and caramelised (about 5–7 minutes).
- Remove from heat and immediately sprinkle over the peanuts and chocolate so it slightly melts.
- Spoon into small cups or bowls.
- Top with yoghurt or cream if using.
How to serve it:
- Warm for a cosy night-in dessert
- Chilled the next day as a sweet snack
- Fancy it up with berries or a drizzle of extra honey
