Yoh…I can’t believe we are already counting the last few days of December. Haibo, time really said I’m not waiting for anyone.
And can I just say — you guys really kept me on my toes this festive season. Every time I blinked, I had to come up with something new and exciting for you to try. Because festive food? It’s a whole different vibe from our usual year-round meals. It needed to be light, fun, and still feel like a celebration.
So today, fam… plot twist.
We are going NON-MEAT. Yes. Non. Meat.
Before you side-eye me, hear me out. We have been eating meat like there’s no tomorrow since Christmas. So today we are just giving our bodies a small break and letting our green, healthy veggies do the talking.

So today we are making our Green Power Veggie Bowl. Trust me guys, as much as it sounds all green and impossible to eat, you will benefit a lot from it.

How to make Green Power Veggie Bowl
Serves: 1–2
Ingredients:
Veg Base:
- 1 cup broccoli florets
- 1 small courgette (zucchini), sliced
- ½ cup green beans, trimmed
- ½ avocado, sliced
Protein Boost:
- ½ cup cooked chickpeas or lentils
Fresh Finish:
- A handful of baby spinach or rocket
- Juice of ½ lemon
Simple Dressing:
- 1 tbsp olive oil
- 1 tsp Dijon mustard
- Pinch of salt
- Cracked black pepper
Optional extras:
- Sesame seeds
- Fresh herbs
- Chilli flakes
Method:
- Cook the greens: Lightly steam or sauté broccoli, courgette, and green beans until just tender but still vibrant.
- Warm the protein: Heat chickpeas or lentils briefly with a pinch of salt and pepper.
- Assemble the bowl: Layer spinach, warm vegetables, chickpeas, and avocado in a bowl.
- Dress lightly: Whisk olive oil, mustard, lemon juice, salt, and pepper. Drizzle over the bowl.
- Finish & enjoy: Sprinkle with seeds or herbs if using. Eat warm or at room temperature.
