How to make Peach & Vanilla Custard Crumble Cups
Serves: 2–3
Ingredients:
Fruit layer:
- 2 ripe peaches (or nectarines), sliced
- 1 tbsp honey or brown sugar
- A squeeze of lemon juice
Custard layer:
- 1½ cups ready-made vanilla custard (or homemade if you prefer)
- Pinch of cinnamon or nutmeg (optional)
- Crumble topping
- ½ cup rolled oats
- 2 tbsp crushed biscuits (Marie or tennis biscuits work well)
- 1 tbsp melted butter
- 1 tbsp honey or sugar
Method:
- Cook the fruit: Add peaches, honey, and lemon juice to a small pan. Cook on medium heat for 5–7 minutes until soft and glossy. Set aside.
- Make the crumble: Mix oats, crushed biscuits, butter, and honey. Toast in a dry pan or bake at 180°C for 8–10 minutes until golden.
- Warm the custard: Gently heat the custard with a pinch of cinnamon or nutmeg—don’t boil.
- Assemble: Spoon warm peaches into cups or bowls, pour over the custard, then finish with the crunchy crumble on top.
- Serve: Enjoy warm, or chill for a few hours for a pudding-style dessert.
