Now, since we are still deep in Back-to-School mode, I had a little heart-to-heart with myself and thought: Who actually has time to stand over a stove in the morning making a full-blown lunch? Because in YOUR house… that simply CANNOT happen. Nope. Not a chance.
So I came up with a super easy, quick, and totally lunchbox-approved recipe — perfect for those rushed mornings when the clock is judging you and the kids are already late.

How to make Cheesy Chicken & Veggie School-Day Toast Pockets
Ingredients:
- 4 slices bread (white or brown)
- 1 cup cooked chicken, shredded (leftovers work perfectly)
- ½ cup grated cheese (cheddar or mozzarella)
- ½ cup mixed veggies, finely chopped (carrot, sweetcorn, peas)
- 2 tbsp mayonnaise or plain yoghurt
- Salt & black pepper to taste
- 1 tsp butter or margarine
Method:
- In a bowl, mix the chicken, veggies, mayo (or yoghurt), salt and pepper.
- Place a spoonful of filling onto one slice of bread.
- Sprinkle cheese over the filling.
- Cover with another slice of bread and gently press down.
- Butter the outside of the sandwich.
- Toast in a pan on medium heat until golden on both sides or use a sandwich toaster.
- Cut into halves or triangles for easy eating.
School-Friendly Tips:
- Swap chicken for tuna or mashed beans if needed
- Add tomato slices for extra nutrition
- Wrap in foil to keep warm for lunchboxes
