It’s the 1st of September 2025, spring is peeking around the corner , and your taste buds deserve something fun, fiery, and fabulous to celebrate. Regardless if you are back at work, still in weekend mode, or just looking for an excuse to spice up your lunchbox — this recipe is your perfect little pick-me-up.

How to make Amasi spiced devilled eggs

Ingredients:

  • 4 large eggs
  • 2-3 tablespoons Amasi (adjust to taste)
  • ½ teaspoon mustard (optional, for zing)
  • Salt and pepper to taste
  • Pinch of paprika or curry powder (for warmth)
  • 1 tablespoon finely chopped spring onion
  • 1 tablespoon mango atchar (for topping)
  • A few drops of lemon juice (optional)

Method:

  1. Boil the eggs in the pot for about 10 minutes. Let them cool. Then peel carefully.
  2. Slice the eggs in half lengthwise and gently remove the yolks.
  3. Mash the yolks in a bowl using a fork. Add Amasi, mustard, salt, pepper, paprika, and lemon juice. Mix until smooth and creamy.
  4. Spoon the mixture back into the egg whites.
  5. Top with atchar and sprinkle chopped herbs or paprika for colour.
  6. Serve chilled or at room-temp – perfect for Sunday lunches, parties, or even as a light snack.

Food tips:

  • Amasi magic: If your Amasi is too runny, chill it first or add a little bit at a time to avoid a watery filling.
  • Texture matters: For an extra – smooth filling, blend the yolk mixture in a small food processor or mash really well with a spoon if you are keeping it kasi-simple.
  • Heat lovers: Add a dash of Chilli powder or crushed chilies into the yolk mix for an extra spicy kick.
  • Swop it out: No spring onions? Try finely chopped prickles, red onions or even chives from your garden.
  • Atchar boost: Try different flavours of atchar – mango, mixed veg, or carrot and adjust depending on who you are serving (kids might want less heat).
