What’s the very first meal we are starting with today?
Allow me to introduce a little something special I made just for us: Asanda’s New Beginnings Bowl.
Because we have stepped into a fresh chapter, this meal is a whole celebration—feeding us food-wise, body-wise, and spirit-wise. Yes, all three levels activated!
So without any further delays, fam…let me show you how to make this soon to be your fave meal.
Let’s get into it!
How to make Asanda’s New Beginnings Bowl
Serves: 2
Ingredients:
Base:
- 1 cup cooked brown rice or quinoa
- Veggies
- 1 cup roasted sweet potato cubes
- ½ avocado, sliced
- 1 cup baby spinach or mixed greens
- Protein
- 2 eggs (soft-boiled or fried)
- or ½ cup chickpeas, lightly seasoned
Fresh Dressing:
- 1 tbsp olive oil
- Juice of ½ lemon
- 1 tsp honey
- Pinch of salt & black pepper
- Optional extras
- toasted seeds
- fresh herbs
- chilli oil
Method:
- Prepare the base: Cook rice or quinoa according to package instructions.
- Roast the sweet potatoes: Toss cubes with olive oil and salt. Roast at 190°C for 25 minutes until golden.
- Cook your protein: Soft-boil or fry eggs to your liking, or warm chickpeas with a pinch of spice.
- Assemble the bowl: Layer rice, sweet potatoes, spinach, avocado, and protein.
- Dress lightly: Whisk olive oil, lemon juice, honey, salt, and pepper. Drizzle over the bowl.
- Pause & enjoy: Eat slowly. Let it be intentional.
