Let’s be honest—some of us probably reached the “can’t even move without groaning” level of stuffed, and that’s exactly what Christmas is supposed to be about: eat, nap, repeat.
But today? Today we are taking it easy on the tummy. I have got a simple, light, and super tasty recipe for you: my Boxing Day Citrus Fish & Fresh Crunch Plate (had to give it a special name for the occasion, of course!).

How to make the Boxing Day Citrus Fish & Fresh Crunch Plate
Serves: 2
Ingredients:
Fish:
- 2 white fish fillets (hake, tilapia, or cod)
- Salt & cracked black pepper
- Zest of ½ orange
- Juice of ½ lemon
- 1 tsp olive oil
Fresh Crunch Side:
- 1 cucumber, sliced
- 1 orange, segmented
- ½ avocado, sliced
- A handful of mixed leaves or rocket
Simple Dressing:
- 1 tbsp olive oil
- 1 tsp honey
- A squeeze of lemon
- Pinch of salt
Method:
- Cook the fish: Season fish with salt, pepper, orange zest, lemon juice, and olive oil. Pan-sear or bake at 180°C for 10–12 minutes until flaky.
- Build the crunch plate: Arrange cucumber, orange, avocado, and leaves on a plate.
- Dress lightly: Whisk dressing ingredients and drizzle over the fresh side.
- Serve: Place fish alongside the fresh crunch salad. Finish with extra citrus zest if you like.
