Hey, hey, hey, Happy NEW WEEK, fam!!!!

Okay, real talk… is it still Summer, or did we just skip straight into Winter?! It’s so cold out here, and don’t even get me started on the heavy rain. Like, Mother Nature, what’s going on?

But you know what? This kind of weather is the perfect excuse to do absolutely nothing, right? Honestly, I love a weather like this – chilly, cloudy, with a little rain to cosy up to. As a Winter baby, this is my vibe.

So, with all this weather confusion, I thought: “Why not throw together something delicious and easy?” That’s when I came up with this Creamy Avocado & Lemon Chicken Wraps recipe.
Trust me, this will not only warm you up but also save your energy while you kick back, relax, and catch up on your favourite shows.

Alright, enough chit-chat – let’s dive into this deliciousness:

Ingredients:

  • 1 tortilla or soft wrap
  • ½ cup cooked chicken breast, shredded or cubed
  • ½ ripe avocado
  • 1 tablespoon lemon juice
  • 1 teaspoon mayo or plain yoghurt
  • A pinch of salt
  • A pinch of black pepper
  • A handful of lettuce or baby spinach
  • Optional: a tiny pinch of chilli flakes

Method:

  1. Make the Creamy Avo Base: In a bowl, mash the avocado with lemon juice, salt, pepper, and mayo/yoghurt until smooth and creamy.
  2. Add the Chicken: Fold the shredded chicken into the creamy avo mixture until everything is nicely coated.
  3. Assemble the Wrap: Lay your tortilla flat. Add lettuce/spinach down the center. Spoon the chicken–avo mixture on top.
  4. Wrap It Up: Roll the tortilla tightly like a burrito. Slice in half if you want it cute and snack-sized.
  5. Enjoy: Eat it fresh for a light lunch, a quick snack, or even a late-night bite.
