How to make Creamy Avocado & Tomato Chicken Cups
Serves: 2–3
Ingredients:
- 1 chicken breast, cooked and shredded
- ½ ripe avocado
- 1 small tomato, finely chopped
- 1 tbsp mayo or plain yoghurt
- 1 tsp lemon juice
- Salt & black pepper
- A pinch of paprika
- Lettuce leaves (to use as “cups”)
Method:
- In a bowl, mash the avocado with lemon juice, salt, pepper, and paprika.
- Add shredded chicken and chopped tomato → mix gently.
- Taste and adjust seasoning (add more lemon for brightness).
- Spoon the mixture into fresh lettuce leaves to form “cups.”
- Serve immediately — fresh, creamy, crunchy, and perfect for a light Friday meal.
Optional Twists:
- Add grated cheese
- Add a drizzle of sweet chili sauce
- Add spring onion for crunch
