Okay, real talk—has the weather been on a wild rollercoaster lately or what? Sunny one minute, stormy the next, and don’t even get me started on that sneak-attack chill in the air. I seriously hope you have managed to dodge the sniffles, and if not… I really hope some of my recent cosy recipes came to your rescue.

How to make a Creamy Butternut & Carrot Soup

Ingredients:

  • 1 medium butternut, peeled and cubed
  • 2 carrots, chopped
  • 1 onion, chopped
  • 2 cups vegetable or chicken stock
  • 1 tbsp butter or oil
  • Salt & pepper
  • A splash of cream or milk (optional)

Method:

  1. Sauté onion in butter until soft.
  2. Add butternut and carrots; cook for 5 minutes.
  3. Pour in stock and simmer until vegetables are soft (about 25 min).
  4. Blend until smooth, return to pot, and add cream or milk for richness.
  5. Serve with bread (toasted or normal) or garlic rolls.
