How to make a Creamy Butternut & Carrot Soup
Ingredients:
- 1 medium butternut, peeled and cubed
- 2 carrots, chopped
- 1 onion, chopped
- 2 cups vegetable or chicken stock
- 1 tbsp butter or oil
- Salt & pepper
- A splash of cream or milk (optional)
Method:
- Sauté onion in butter until soft.
- Add butternut and carrots; cook for 5 minutes.
- Pour in stock and simmer until vegetables are soft (about 25 min).
- Blend until smooth, return to pot, and add cream or milk for richness.
- Serve with bread (toasted or normal) or garlic rolls.
