How to make Gentle Garlic Chicken Livers with Soft Onions

Serves: 2

Ingredients:

  • 400 g chicken livers, cleaned and trimmed
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1 tbsp butter or cooking oil
  • 1 tbsp olive oil (optional)
  • ½ tsp dried thyme
  • ½ tsp paprika
  • Salt & black pepper to taste
  • ¼ cup water or light chicken stock
  • Fresh parsley (optional, for garnish)

Method:

  1. Soften the onions: Heat butter/oil in a pan over medium heat. Add onions and cook slowly until soft and slightly golden.
  2. Add garlic & spice: Stir in garlic, thyme, paprika, salt, and pepper. Cook for 30 seconds.
  3. Cook the livers: Add chicken livers to the pan. Cook for about 3–4 minutes per side until browned but still tender inside.
  4. Finish gently: Pour in water or stock, reduce heat, and simmer for 3–5 minutes until lightly saucy.
  5. Serve: Garnish with parsley and serve hot.

    What to serve it with:
    *With soft pap, rice, or toast
    *Alongside a simple tomato & onion salad
