Ingredients:
- 1.5 kg pork shoulder or pork belly, cut into cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 potatoes, peeled and diced
- 1 bell pepper, chopped
- 1 can (400g) diced tomatoes
- 2 cups chicken or vegetable broth
- 1 cup dry white wine (optional)
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Method:
- Brown the Pork: Heat olive oil in a large pot over medium-high heat. Add the pork cubes and sear on all sides until golden brown. Remove the pork and set it aside.
- Sauté the Vegetables: In the same pot, add chopped onions and garlic. Sauté for 3-4 minutes until soft and fragrant. Add the carrots, potatoes, and bell pepper. Cook for another 5 minutes, stirring occasionally.
- Add Liquids and Spices: Pour in the diced tomatoes, broth, and white wine (if using). Stir in thyme, paprika, cumin, and bay leaf. Season with salt and pepper to taste.
- Simmer: Return the pork to the pot and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
- Finishing Touches: Once cooked, remove the bay leaf and adjust seasoning if necessary. Garnish with freshly chopped parsley.
