  • 1.5 kg pork shoulder or pork belly, cut into cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 potatoes, peeled and diced
  • 1 bell pepper, chopped
  • 1 can (400g) diced tomatoes
  • 2 cups chicken or vegetable broth
  • 1 cup dry white wine (optional)
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method:

  1. Brown the Pork: Heat olive oil in a large pot over medium-high heat. Add the pork cubes and sear on all sides until golden brown. Remove the pork and set it aside.
  2. Sauté the Vegetables: In the same pot, add chopped onions and garlic. Sauté for 3-4 minutes until soft and fragrant. Add the carrots, potatoes, and bell pepper. Cook for another 5 minutes, stirring occasionally.
  3. Add Liquids and Spices: Pour in the diced tomatoes, broth, and white wine (if using). Stir in thyme, paprika, cumin, and bay leaf. Season with salt and pepper to taste.
  4. Simmer: Return the pork to the pot and bring the stew to a boil. Reduce the heat, cover, and simmer for 1.5 to 2 hours, or until the pork is tender and the flavors have melded together.
  5. Finishing Touches: Once cooked, remove the bay leaf and adjust seasoning if necessary. Garnish with freshly chopped parsley.
