Ingredients:
For the stir-fry:
- 2 boneless, skinless chicken breasts (sliced into thin strips)
- 2 tablespoons vegetable oil
- 1 bell pepper (sliced)
- 1 carrot (julienned)
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic (minced)
- 1 teaspoon fresh ginger (grated)
- 2 green onions (sliced)
- Sesame seeds (for garnish)
For the sauce:
- ¼ cup soy sauce
- 2 tablespoons honey (or brown sugar)
- 1 tablespoon oyster sauce (optional, for extra depth)
- 1 tablespoon cornstarch (dissolved in 2 tablespoons water)
- 1 teaspoon sesame oil
- ½ teaspoon red pepper flakes (optional, for heat)
Method:
- Prepare the sauce: In a small bowl, whisk together soy sauce, honey, oyster sauce, cornstarch slurry, sesame oil, and red pepper flakes. Set aside.
- Cook the chicken: Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Add the sliced chicken and cook until golden brown and cooked through (about 5-6 minutes). Remove from the pan and set aside.
- Stir-fry the veggies: Add the remaining tablespoon of oil to the pan. Sauté garlic and ginger until fragrant (about 30 seconds). Add bell peppers, carrots, broccoli, and snap peas, and stir-fry for 3-4 minutes until slightly tender but still crisp.
- Combine everything: Return the cooked chicken to the pan. Pour in the sauce and toss everything together until evenly coated. Cook for another 1-2 minutes, allowing the sauce to thicken.
- Serve & enjoy: Sprinkle with green onions and sesame seeds. Serve hot over steamed rice or noodles.
