Ingredients:

For the stir-fry:

  • 2 boneless, skinless chicken breasts (sliced into thin strips)
  • 2 tablespoons vegetable oil
  • 1 bell pepper (sliced)
  • 1 carrot (julienned)
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (grated)
  • 2 green onions (sliced)
  • Sesame seeds (for garnish)

For the sauce:

  • ¼ cup soy sauce
  • 2 tablespoons honey (or brown sugar)
  • 1 tablespoon oyster sauce (optional, for extra depth)
  • 1 tablespoon cornstarch (dissolved in 2 tablespoons water)
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes (optional, for heat)

Method:

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, honey, oyster sauce, cornstarch slurry, sesame oil, and red pepper flakes. Set aside.
  2. Cook the chicken: Heat 1 tablespoon of oil in a large pan or wok over medium-high heat. Add the sliced chicken and cook until golden brown and cooked through (about 5-6 minutes). Remove from the pan and set aside.
  3. Stir-fry the veggies: Add the remaining tablespoon of oil to the pan. Sauté garlic and ginger until fragrant (about 30 seconds). Add bell peppers, carrots, broccoli, and snap peas, and stir-fry for 3-4 minutes until slightly tender but still crisp.
  4. Combine everything: Return the cooked chicken to the pan. Pour in the sauce and toss everything together until evenly coated. Cook for another 1-2 minutes, allowing the sauce to thicken.
  5. Serve & enjoy: Sprinkle with green onions and sesame seeds. Serve hot over steamed rice or noodles.
