Think of it as a cross between an omelet and a crustless quiche, loaded with fresh veggies, creamy cheese, and your favourite proteins.

How to make an easy Frittata recipe
Ingredients:
- 6 large eggs
- ¼ cup of milk (or heavy cream for extra richness)
- ½ teaspoon of salt
- ¼ teaspoon black pepper
- 1 tablespoon of olive oil (or butter)
- ½ cup of diced onion
- 1 cup of chopped vegetables (e.g. bell peppers, spinach, mushrooms and zucchini)
- ½ cup of shredded cheese (cheddar, feta, or mozzarella work well)
- ¼ teaspoon of red pepper flakes (optional, for a little heat)
Method:
- Preheat oven: If finishing in the oven, preheat to 180 degrees Celsius.
- Whisk eggs: In a bowl, whisk together eggs, milk, salt, and pepper. Set aside.
- Cook vegetables and protein: Heat olive oil in a non-stick oven safe skillet over medium heat. Sauté onions until soft, then add other vegetables and cook until tender. If using cooked protein, stir it in now.
- Add eggs and cheese: Pour the egg mixture over the veggies, tilting the pan to distribute evenly. Sprinkle cheese on top.
- Cook on stove: Let the Frittata cook undisturbed for about 5 minutes until the edges are starting to set.
- Finish in the oven: Transfer the skillet to the oven and bake for 10-12 minutes until the Frittata is fully set and slightly golden on top. (If not using an oven, cover with a lid and cook on low heat until set).
- Serve and enjoy: Let it cool for a few minutes, then slice and serve warm.
