I have always believed that no road trip is complete without padkos.

There’s just something comforting about reaching into your bag and pulling out a homemade snack that feels like a little piece of home. For me, peaches have always been that fruit that makes me smile—sweet, juicy, and filled with sunshine. So I decided to turn them into my own Peach Padkos.

I love making it because it’s simple, healthy, and travel-friendly. When I snack on it, I’m reminded of family trips, roadside laughter, and that feeling of slowing down to enjoy the journey, not just the destination.

How to make a Lekker Peach Padkos

Ingredients:

  • 4 ripe but firm peaches (yellow or white)
  • 1 tbsp honey (or maple syrup)
  • ½ tsp ground cinnamon
  • A small squeeze of lemon juice
  • ½ cup mixed nuts (almonds, cashews, pecans, or peanuts)
  • ½ cup dried cranberries or raisins
  • Optional: ¼ cup shredded coconut or granola clusters

Method:

  1. Prep the peaches: Wash and slice the peaches into wedges (leave the skin on for extra fiber and easy handling). Toss the slices in a bowl with honey, cinnamon, and lemon juice to keep them fresh and zesty.
  2. Roast or keep fresh (your choice):
    Fresh version: Pack the honey-cinnamon peaches as they are.
    Roasted version: Spread the slices on a baking sheet, bake at 180°C for 15–20 minutes until slightly caramelised, then let them cool.
  3. Mix your padkos snack pack: Combine the peaches with nuts, dried cranberries/raisins, and coconut or granola. Portion into small containers or zip bags for easy road-trip snacking.

    Tips:
    *If you are driving far, freeze the peach slices the night before — they will thaw slowly and stay cool.
    *Swap peaches for nectarines or apricots if you like.
    *You can add a few cubes of cheese or biltong on the side for a savoury balance.
