Can we just pause for a second? How did we get here so fast? One minute we were setting New Year’s resolutions, and now some of us are already plotting holiday getaways, choosing our groove spots, and deciding who’s boarding the 2026 train with us. Time is doing the absolute most!
And since we are stepping into December like the fabulous foodies we are, we are celebrating with something bright, fresh, and ridiculously delicious: Mango–Mint Couscous Bowls with a Chilli-Lime Drizzle. Do they need an intro? Hmm… maybe, maybe not… but trust me — these little beauties slap.
Plus, they are not just cute and tasty. They are loaded with light, feel-good goodness:

How to make Mango–Mint Couscous Bowls with a Chilli-Lime Drizzle
Ingredients:
For the Couscous Bowls:
- 1 cup couscous
- 1 cup hot water
- 1 tablespoon olive oil
- 1 small mango, diced
- ½ cucumber, finely diced
- ¼ red onion, finely chopped
- 1 tablespoon chopped fresh mint
- Salt & black pepper
For the Chilli-Lime Drizzle:
- 2 tablespoons olive oil
- Juice of 1 lime
- ½ teaspoon honey
- ¼ teaspoon chilli flakes
- Pinch of salt
Method:
- Fluff the couscous: Add couscous to a bowl. Pour hot water over it, cover for 5 minutes.
Fluff with a fork and mix in the olive oil. - Build the base: Add diced mango, cucumber, red onion, and mint into the couscous.
Season lightly with salt and pepper. - Make the drizzle: Whisk together olive oil, lime juice, honey, chilli flakes, and salt.
- Serve: Scoop the couscous mixture into small bowls or lettuce cups.
Drizzle with the chili-lime mixture just before serving.
Optional Extras:
*Add toasted peanuts, feta, or chopped avocado for extra richness.
