How to make One-Pan Lemon & Herb Chickpea Stir-Up
Serves: 2-3
Ingredients:
- 1 can chickpeas, drained and rinsed
- 1 cup frozen peas or baby peas
- 1 small onion, diced
- 2 cloves garlic, crushed
- 1 handful cherry tomatoes, halved
- 1 small lemon (juice + zest)
- 1 tsp paprika
- 1 tsp mixed herbs
- Salt & pepper to taste
- 1–2 tbsp olive oil
- Optional: fresh parsley or coriander to garnish
Method:
- Heat oil in a pan and sauté onions until soft.
- Add garlic and paprika — fry until fragrant.
- Toss in chickpeas and peas, stirring to coat in flavour.
- Add cherry tomatoes and herbs — sauté for 3–5 minutes.
- Squeeze in lemon juice + zest, season with salt and pepper.
- Give everything a final toss until warmed through.
- Serve warm and garnish with fresh herbs.
