Hey friends!

So… quick check-in: how are we really feeling today?

Actually—scratch that. The real question is… what are we craving to eat right now? Because let’s be honest, food understands us better than most people do.

As for me? I am fully, unapologetically living in my sweet era. Peak happiness. Maximum joy. And yes—it’s because I’m making dessert. Again!

You already know this about me: sugar and I have a very serious relationship. It does something to my spirit, my soul, my whole personality. I can’t explain it— but just know I’m smiling for a reason.

So today’s little bundle of joy is Peach & Vanilla Custard Crumble Cups.

I know, I know—some of us might have whipped up something similar around Christmas, but trust me, this version has its own personality. Same vibe, new energy.

So let me show you how to make this delicious dessert.

How to make Peach & Vanilla Custard Crumble Cups

Serves: 2–3

Ingredients:
Fruit layer:

  • 2 ripe peaches (or nectarines), sliced
  • 1 tbsp honey or brown sugar
  • A squeeze of lemon juice

Custard layer:

  • 1½ cups ready-made vanilla custard (or homemade if you prefer)
  • Pinch of cinnamon or nutmeg (optional)
  • Crumble topping
  • ½ cup rolled oats
  • 2 tbsp crushed biscuits (Marie or tennis biscuits work well)
  • 1 tbsp melted butter
  • 1 tbsp honey or sugar

Method:

  1. Cook the fruit: Add peaches, honey, and lemon juice to a small pan. Cook on medium heat for 5–7 minutes until soft and glossy. Set aside.
  2. Make the crumble: Mix oats, crushed biscuits, butter, and honey. Toast in a dry pan or bake at 180°C for 8–10 minutes until golden.
  3. Warm the custard: Gently heat the custard with a pinch of cinnamon or nutmeg—don’t boil.
  4. Assemble: Spoon warm peaches into cups or bowls, pour over the custard, then finish with the crunchy crumble on top.
  5. Serve: Enjoy warm, or chill for a few hours for a pudding-style dessert.
