Hey hey! I’m so glad you stopped by!

Should I say Happy Monday, or are we pretending it’s still the weekend?

Anyway, let’s brighten things up—because today, we are cooking something delicious!

If you have been following my recipes for a while, you already know my kitchen rule: food should feel like home—simple, cosy, and made with a whole lot of love. That’s exactly the vibe behind my Savory Sweetcorn & Cheese Mini Fritters. And the best part? These little bites of joy work any time of the day—breakfast, lunch, or a midnight snack!

Whenever I need something quick and tasty, these fritters are my go-to. So grab a comfy seat, relax, and cook along with me as we whip up one of my favourite feel-good treats.

How to make Savory sweetcorn & cheese mini fritters

Ingredients:

  • 1 cup sweetcorn kernels (fresh, canned, or frozen)
  • ½ cup grated cheddar cheese
  • ½ cup self-raising flour
  • 1 egg
  • 2 tbsp milk (or water)
  • ½ small onion, finely chopped
  • ½ tsp mixed herbs (or dried parsley)
  • Salt and black pepper to taste
  • 1 tbsp cooking oil (for frying)

Optional:

  • A pinch of chilli flakes for heat
  • Fresh coriander or parsley for garnish

Method:

  1. Prepare the Batter: In a medium bowl, whisk the egg and milk together. Add the flour and stir until smooth.
  2. Add the Flavour: Mix in the sweetcorn, grated cheese, chopped onion, herbs, salt, and pepper. Stir gently until all ingredients are evenly combined. The batter should be thick but spoonable — add a splash more milk if too stiff.
  3. Cook the Fritters: Heat oil in a non-stick pan over medium heat. Spoon small rounds of batter (about 2 tablespoons each) into the pan. Flatten slightly with the back of the spoon and cook for 2–3 minutes per side, until golden brown and crisp.
  4. Serve Hot or Cold: Enjoy them fresh off the pan with a dip like sweet chili sauce, plain yogurt, or guacamole — or store them in an airtight container to snack on later.

    Asanda’s tips:
*You can make them mini-size for an on-the-go snack, or bigger for a quick lunch.
*Add diced red peppers or spinach for extra colour and nutrition.
*Perfect with tea, juice, or even as a side to a salad.
