How to make Spinach & cheese cocktails pastries

Ingredients:

  • 1 roll puff pastry (thawed if frozen)
  • 2 cups fresh spinach (washed, chopped, and lightly sautéed OR use frozen spinach, thawed and squeezed dry)
  • 1 cup grated cheese (cheddar, feta, or mozzarella – or a mix)
  • 1 small onion (finely chopped, optional)
  • 1 garlic clove (minced, optional)
  • 1 tbsp butter or oil (for sautéing)
  • 1 egg (for egg wash)
  • Salt and pepper (to taste)
  • A pinch of nutmeg (optional, but adds warmth)

Method:

  1. Prepare the Filling: Heat butter/oil in a pan. Sauté onion until soft, add garlic, then stir in spinach.
    Cook for 2–3 minutes until wilted and moisture evaporates. Season with salt, pepper, and nutmeg.
    Let it cool, then mix in the grated cheese.
  2. Prepare the Pastry: Preheat oven to 180°C (350°F). Roll out puff pastry on a floured surface.
    Cut into small squares (about 5×5 cm) or circles using a cookie cutter.
  3. Assemble: Place a teaspoon of spinach-cheese filling in the center of each pastry piece. Fold into a triangle or half-moon shape, and press edges with a fork to seal. Brush the tops with beaten egg for a golden finish.
  4. Bake: Place on a lined baking tray. Bake for 15–20 minutes or until puffed and golden brown.
  5. Serve: Serve warm as cocktail bites with a dip (sweet chili, garlic mayo, or chutney).

    Tip:
    *You can also add cream cheese or ricotta for extra creaminess, or a sprinkle of chili flakes for a kick.
