Introducing my Sticky Orange & Honey Christmas Chicken Traybake—from my kitchen straight to your heart.
I love you, fam. Eat well, laugh loud, and have the most blessed Christmas ever!
How to make Sticky Orange & Honey Christmas Chicken Traybake
Serves: 4–6
Ingredients:
Chicken:
- 1 whole chicken (or 8 chicken pieces)
- Salt & black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- ½ tsp cinnamon (trust me)
- 2 tbsp olive oil
Sticky Christmas Glaze:
- Zest of 1 orange
- Juice of 1 large orange
- 3 tbsp honey
- 2 tbsp soy sauce
- 2 cloves garlic, crushed
- 1 tsp wholegrain mustard
Festive Tray Veg (optional but recommended):
- Baby potatoes, halved
- Carrots, thickly sliced
- Red onion, wedged
- A handful of rosemary sprigs
Method:
- Preheat oven to 190°C.
- Season the chicken: Pat chicken dry. Rub with olive oil, salt, pepper, paprika, thyme, and cinnamon.
- Make the glaze: Mix orange zest, orange juice, honey, soy sauce, garlic, and mustard.
- Assemble the tray: Place vegetables in a roasting tray, season lightly, add rosemary. Place chicken on top.
- Glaze generously: Brush half the glaze over the chicken.
- Roast: Roast uncovered for 45 minutes, basting once.
- Final gloss: Brush with remaining glaze and roast another 20–30 minutes until sticky, golden, and irresistible.
- Rest & serve: Rest 10 minutes before carving. Spoon sticky pan juices over everything.
