Happy Wednesday! We have made it halfway through the week — woohoo!
Today, we are cooking up something light, flavourful, and super easy: Sweet & Spicy Chicken Stir-Fry.
Now, here’s the fun part — you don’t have to make it exactly like mine. Think of this as your base recipe. Add your favourite veggies, play with the spice level, or toss in whatever you have got in the fridge. Make it yours!
Alright, enough talking — let’s get cooking!
How to make Sweet and spicy chicken stir-fry
Serves: 2–3
Prep time: 10 mins
Cook time: 20 mins
Ingredients:
- 2 chicken breasts, thinly sliced
- 1 tbsp oil
- ½ onion, sliced
- ½ red pepper, sliced
- ½ yellow pepper, sliced
- 1 small carrot, julienned (thinly sliced)
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp chili flakes (optional for heat)
- 1 tsp garlic powder
- ½ tsp ginger powder or a small piece of fresh ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Method:
- Prepare the sauce: In a small bowl, mix soy sauce, honey, chili flakes, garlic, and ginger. Set aside.
- Cook the chicken: Heat oil in a large pan or wok. Add chicken slices, season with salt and pepper, and fry until golden brown and cooked through. Remove from the pan.
- Sauté the veggies: In the same pan, toss in onions, peppers, and carrots. Stir-fry for about 3–4 minutes until slightly tender but still crisp.
- Combine and coat: Add the chicken back into the pan, pour in the sauce, and stir until everything is coated and glossy. Let it cook for another 2 minutes on low heat.
- Serve: Enjoy hot over fluffy rice or noodles. Sprinkle sesame seeds or chopped spring onions if you would like a pretty finish.
