Heeeyyy my beautiful fam!!!
Yoh, is it just me or is the sun trying to bake us alive today? Like, hello up there—are we being grilled on purpose?
But anyways, you know the golden rule in this home: GRATITUDE, always! No matter what life throws at us—even if we are melting like chocolate that forgot it was supposed to be in the fridge—we stay thankful!
Now listen here, my lovely people… today we are switching things up and doing something fresh, fun, and super HEALTHY!
We are making: Tropical Sunrise Fruit Boats!
Fam… let me tell you… this one? This one will transport you straight to holiday mode. I won’t oversell it like a TV commercial, but just know one thing: It will make you smile, it will slap your tummy, it will make you want more, and……………………it will be one of your favourite recipes.
How to make Tropical Sunrise Fruits Boats
Serves: 2-3
Ingredients:
- 2 bananas
- 1 cup strawberries, sliced
- 1 mango, diced
- ½ cup pineapple chunks (fresh or canned)
- 2 tablespoons plain yoghurt or vanilla yoghurt
- 1 teaspoon honey (optional)
- A squeeze of lemon or lime
- Optional toppings:
- chopped mint
- crushed peanuts or almonds
- chia seeds
Method:
- Prepare the banana boats: Peel the bananas and slice them in half lengthwise. Lay each half flat on a plate — this is your “boat.”
- Mix your fruit: In a bowl, combine strawberries, mango, and pineapple with a small squeeze of lemon/lime to brighten the flavour.
- Fill the boats: Spoon the fruit mixture generously onto the banana halves.
- Add the creamy touch: Drizzle yoghurt over the top (or add small dollops).
- Finish with flair: Add honey if you like extra sweetness. Sprinkle with mint, nuts, or chia seeds for crunch and colour.
