How to make Creamy Baked Veggie Roll-Ups Ingredients:Base: 1 large eggplant (brinjal), sliced lengthwise 1 small zucchini, sliced lengthwise 1 tablespoon olive oil Salt & black pepper Filling: ½ cup cream cheese (or thick plain yogurt) ¼ cup grated cheese 2 tablespoons finely chopped spinach 2 tablespoons grated carrot 1 tablespoon chopped onion ½ teaspoon mixed herbs Sauce: ½ cup cream or milk 2 tablespoons tomato sauce 1 clove garlic, minced Pinch of salt Method: Roast the veggie slices: Preheat oven to 180°C. Brush eggplant and zucchini slices with olive oil, season lightly, and bake for 10–15 minutes until soft and flexible. Make the filling: Mix cream cheese, grated cheese, spinach, carrot, onion, and herbs until creamy. Roll them up: Take each veggie slice, add a spoon of filling, and roll it up gently. Make it saucy: In a small bowl, mix cream, tomato sauce, garlic, and salt. Assemble & bake: Place all roll-ups in a baking dish. Pour the sauce over them.
