I don’t know what’s been going on with me lately, but ever since Easter, I have been in my colourful era — bright, happy, rainbow-on-a-plate type of meals. But don’t worry… this is the last one. (Okay, no promises…)

Now listen — these veggie & cheese muffins? They understand the assignment. Breakfast? Sorted. Lunch? Done. Supper? Say less. Lunchbox? Absolutely. Basically, they have got your back at any time of the day.

And speaking of… my stomach is already making noise and these fresh muffins are calling my name, so let’s not waste another second.

How to make Savoury Veggie & Cheese Muffin Bites

Ingredients:

  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup milk
  • 1 egg
  • 2 tablespoons oil or melted butter

Filling:

  • ½ cup grated cheese
  • ¼ cup grated carrot
  • ¼ cup sweet corn
  • 2 tablespoons finely chopped spinach
  • 2 tablespoons finely chopped onion
  • ½ teaspoon mixed herbs
  • Black pepper to taste

Method:

  1. Preheat: Set oven to 180°C and grease a muffin tray.
  2. Make the batter: In a bowl, mix:
    *Flour
    *Baking Powder
    *Salt
    In another bowl, whisk:
    *Milk
    *Egg
    *Oil
    Combine wet and dry ingredients to form a smooth batter.
  3. Add the filling: Fold in cheese, carrot, corn, spinach, onion, herbs, and pepper.
  4. Bake: Spoon mixture into muffin tray. Bake for 20–25 minutes until golden and cooked through.
  5. Cool & pack: Let them cool slightly and pack them.
