How to make Cheddar Mug Scramble with Atchar

Serves: 1
Preparation time: 10 minutes
Cooking time: 2 minutes
Cost per recipe: Serves 1 for under R20

Ingredients:

  • 3 eggs
  • 30 ml (2 tbsp) milk
  • Few parsley leaves, finely chopped + extra
  • Salt and pepper
  • 30 ml (2 tbsp) cheddar, grated
  • 30 ml (2 tbsp) atchar

Method:

  1. Spray a large mug with cooking spray. Beat together the eggs, milk and parsley. Season with salt and pepper. Add to the mug.
  2. Microwave on high for 40 seconds. Stir. Microwave for another 30 seconds. Stir again.
  3. Top with cheddar and atchar. Microwave for about 30 seconds or until cheddar has melted and eggs have set. Scatter with extra parsley.
