Anyway, I hope everyone is doing amazing today. Since we are all here and ready, let’s get straight into the good stuff!

Introducing our star of the day: Cheesy Beef & Broccoli Potato Mash Bowl!

Guys!!! Before we do anything else, please take a moment to admire today’s star. Look at that picture properly. Go on… I will wait.

Tell me, does it not look absolutely appetising? Does it not look like a bowl of comfort waiting to happen? Healthy? Check! Delicious? Definitely! And does it look like it could become your new favourite meal? I mean… I’m not saying it will, but I’m also not saying it won’t!

I’m going to leave it right there before I make us all too hungry. Let me show you how to bring this beautiful creation to life!

How to make Cheesy Beef & Broccoli Potato Mash Bowl

Ingredients:

  • 500 g potatoes, peeled and chopped
  • 300 g lean beef mince
  • 1 small broccoli head, cut into small florets
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • ½ cup milk
  • 1 cup grated cheddar cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried mixed herbs
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Chopped spring onion or parsley for garnish

Method:

  1. Boil the potatoes until soft, then drain and mash with the butter and milk until smooth.
  2. Steam or boil the broccoli for 3–4 minutes until just tender.
  3. Heat the olive oil in a pan and sauté the onion and garlic until fragrant.
  4. Add the beef mince, paprika, mixed herbs, salt, and pepper, and cook until browned.
  5. Stir the broccoli into the cooked beef and cook for another minute.
  6. Spoon the creamy mashed potatoes into serving bowls.
  7. Top with the beef and broccoli mixture.
  8. Sprinkle the grated cheddar over the top while everything is still hot so it melts beautifully.
  9. Garnish with chopped spring onion or parsley and serve immediately.
