Alright, now that we are both here and we know what time it is, let’s get straight to the good stuff.

Today’s star of the show: Honey-Apple Pork Chops with Rosemary Carrots!

Now listen… with this cloudy, dusty weather outside and the fact that it’s Friday, who has the energy for a meal that requires a whole committee meeting?! Not me!

So when I woke up this morning, I thought, “Hmm… let me switch things up a little and make us something different.” And just like that, this beauty happened!

So, grab your apron and come with me. Let me show you exactly how to make it!

How to make Honey-Apple Pork Chops with Rosemary Carrots

Ingredients:
For the pork:

  • 1 pork chops
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • Salt and black pepper
  • 1 tbsp olive oil

For the apples & carrots:

  • 2 apples, thinly sliced
  • 3 large carrots, cut into thin sticks
  • 1 tbsp butter
  • 1 tsp brown sugar
  • ½ tsp dried rosemary
  • Pinch of salt

Method:

  1. Season the pork chops with paprika, rosemary, salt and black pepper.
  2. Mix the honey, Dijon mustard, garlic and lemon juice in a small bowl.
  3. Heat the olive oil and cook the pork chops for about 4–5 minutes per side, depending on thickness, until cooked through and nicely browned.
  4. Lower the heat and pour the honey-mustard mixture over the pork. Turn the chops several times until they are beautifully glazed.
  5. Remove the pork and, in the same pan, add the butter and apple slices.
  6. Sprinkle in the brown sugar and rosemary and cook for 2–3 minutes, just until the apples become golden and slightly soft.
  7. Meanwhile, cook the carrots until tender-crisp, then toss them with a little butter, rosemary and salt.
  8. Plate the carrots, place a golden pork chop alongside them, and spoon the warm caramelised apples over the pork.
  9. Finish with a little of that gorgeous honey glaze from the pan.
