So listen… I don’t know what kind of warning the weather department is trying to send us today, but clearly it’s saying: “Cancel plans and wrap yourself in a blanket this weekend.” It’s cold guys, please stay at home and be warm.

Anyway, now that I have finally arrived—hello my beautiful people, hope you missed me as I missed you—we can officially commence today’s most important meeting.

On today’s menu: Baked Chocolate Fudge Avo Pudding.

Yes, you read that right. We are out here healing our souls one dessert at a time.

It’s the weekend, and honestly, our tummies have been through enough stress, emails, responsibilities, So this time? We are showing them love. Proper love. The sweet, chocolatey, no-regrets kind.

This pudding is the type of treat that walks into your stomach, sets up camp, and makes you question why you have been wasting time with other desserts all your life. But I won’t spoil it too much—I want you to have that life-changing first bite experience yourself.

Alright, apron on and let me walk you step by step so we can bring today’s star dish to life.

How to make Baked Chocolate Fudge Avo Pudding

Serves: 8
Preparation time: 25 minutes
Cooking time: 1 hour + cooling

Ingredients:

  • 375 ml (1½ cups) sugar
  • 4 eggs
  • 7.5 ml (½ tbsp) vanilla essence
  • 180 ml (¾ cup) cocoa powder
  • 180 ml (¾ cup) cake flour
  • Pinch salt
  • 60 g butter, melted
  • 180 ml (¾ cup) mashed avocado
  • 200 g dark chocolate, chopped

Method:

  1. Preheat oven to 160°C. Grease a 2L baking dish.
  2. Beat sugar, eggs and vanilla for 10 minutes until thickened. Sift over the cocoa, flour and salt and fold in until just combined.
  3. Slowly pour in melted butter while stirring until incorporated. Stir in avocado and chocolate. Spoon into a greased dish.
  4. Place the dish into a deep oven tray and fill the tray with enough hot water to come halfway up the side of the baking dish.
  5. Bake for about 1 hour or until the edges are just set, but the inside still gooey. Cool for about 20 minutes before serving.
