Happy Monday, my people!

Yes… Monday. The day that arrives whether we invited it or not.

I know, I know—some of us woke up full of energy, while others woke up negotiating with the alarm clock like, “Five more minutes and I promise I will wake up”.

But here we are! Alive, breathing, and legally required to start the week because—unfortunately—there’s no “Skip Monday” button on life yet. If anyone invents that app, please tag me immediately.

Anyway, since we are all here and pretending to be productive, let’s get straight to the important business of the day: food.

Today we are making a Creamy Garlic Chicken & Soft Potato Skillet—a meal so delicious it might actually make you forgive Monday. Creamy, garlicky, comforting… basically the kind of food that gives you the strength to survive the rest of the week.

So grab your pan, bring your appetite, and let me show you step by step how to whip up this ridiculously yummy dish!

How to make Creamy Garlic Chicken & Soft Potato Skillet

Ingredients:

  • 2 chicken breasts, cut into bite-size pieces
  • 2 medium potatoes, peeled and diced small
  • 2 tablespoons butter or cooking oil
  • 2 cloves garlic, finely chopped
  • ½ onion, chopped
  • ½ cup cream or cooking cream
  • ¼ cup milk
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon chopped parsley (optional)

Method:

  1. Cook the potatoes: Heat 1 tablespoon butter or oil in a pan. Add diced potatoes and cook on medium heat for 8–10 minutes, stirring occasionally until they start turning golden and soft. Remove and set aside.
  2. Cook the chicken: In the same pan, add another tablespoon butter or oil. Add chicken pieces, season with salt, pepper, and paprika, and cook until lightly golden.
  3. Add flavour: Add chopped onion and garlic. Cook for 2–3 minutes until fragrant.
  4. Make the creamy sauce: Pour in the cream and milk. Stir gently and let it simmer for 3–4 minutes until slightly thick.
  5. Combine everything: Add the cooked potatoes back into the pan and stir so the sauce coats everything.
  6. Finish: Sprinkle with parsley and cook for another 1 minute.

    Serving idea:
    Serve it with:

    *Warm bread
    *Rice
*Or just enjoy it as a creamy skillet meal.
