It’s a brand-new Monday, which means it’s the start of a brand-new week filled with fresh opportunities, new blessings, and doors waiting to swing wide open. We thank God for the gift of another week!

Now then… I’m here, you are here, and you already know what time it is. It’s time to get down to business!

Today’s star of the show is… Herb Potato & Sausage Chowder!

Yoh, guys! Have you stepped outside today? This weather is not here to make friends—it is COLD.

So I said to myself, “Hayi, this weather needs to be dealt with properly.” And the best way to fight this kind of cold? A nice warm meal! Trust me, this chowder is about to spoil your taste buds, give your tummy a warm hug, and have you going back for seconds before you have even finished the first bowl.

Alright, enough of my yapping—let me show you how to bring this delicious meal to life!

How to make Herb Potato & Sausage Chowder

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 4 beef sausages, sliced into rounds
  • 1 small onion, finely chopped
  • 2 carrots, diced
  • 2 celery stalks, sliced
  • 2 garlic cloves, minced
  • 3 cups vegetable or beef stock
  • 1 cup fresh cream
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish

Method:

  1. Melt the butter in a large saucepan and cook the sausage slices until lightly browned. Remove and set aside.
  2. In the same saucepan, sauté the onion, carrots, celery, and garlic until softened.
  3. Add the diced potatoes, thyme, parsley, and stock.
  4. Bring to a boil, then reduce the heat and simmer for about 20 minutes, until the potatoes are tender.
  5. Lightly mash a few of the potatoes with a spoon to naturally thicken the chowder while leaving most of the chunks intact.
  6. Stir in the fresh cream and return the browned sausages to the saucepan.
  7. Simmer gently for another 5 minutes.
  8. Season with salt and black pepper.
  9. Garnish with fresh parsley and serve hot with slices of crusty bread if desired.
