Happy Thirst-Day, fam!

I hope all of us are doing good today because honestly, just making it this far deserves a round of applause. Life may be doing the absolute most sometimes, but hey… we are still here, and that counts for everything.

Now that I have arrived (yes, the meeting can officially start), let’s get into today’s very important business: FOOD.

Please take your seats, look at your screens, and focus — because today’s main character is Creamy Chicken & Spinach Stuffed Pasta Shells. And trust me, it did not come to play.

This is the kind of meal you make when Thursday is minding its business — not too chaotic, not too boring — just vibing and slowly opening the door for Friday to walk in like a weekend celebrity.

Anyway fam, I will not keep you starving and curious for too long. Let me show you how it’s done… not exactly like me (because let’s be real, I add a little chaos here and there), but close enough to make you feel like a kitchen superstar.

Let’s cook, fam!

How to make Creamy Chicken & Spinach Stuffed Pasta Shells

Ingredients:

  • 9–12 large pasta shells
  • 1 cup cooked chicken, shredded
  • 1 cup spinach, chopped
  • ½ cup cream or thick milk
  • ¼ cup grated cheese
  • 2 tablespoons mayonnaise or cream cheese
  • ½ onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon butter
  • Salt & black pepper to taste

Method:

  1. Cook the pasta: Boil pasta shells in salted water until just soft. Drain and set aside.
  2. Make the filling: In a pan, melt butter. Add onion and garlic, cook until soft. Add spinach and cook until wilted. Stir in shredded chicken, cream, mayonnaise/cream cheese, salt, and pepper. Let it cook for 2–3 minutes until creamy.
  3. Stuff the shells: Take each pasta shell and gently fill it with the creamy chicken mixture.
  4. Assemble: Place the stuffed shells in a baking dish. Pour a little extra cream or milk over the top to keep them soft. Sprinkle grated cheese.
  5. Bake: Bake at 180°C for 15–20 minutes until warm and slightly golden on top.
