How to make Easter Monday Rainbow Veggie & Cheese Mini Cones

Makes: 6-11 cones

Ingredients:
Cones:

  • 6-11 small tortilla wraps or flatbreads
  • 1 teaspoon olive oil

Filling:

  • ½ cup cream cheese (or ricotta for lighter option)
  • ¼ cup feta, crumbled
  • ½ small carrot, grated
  • ½ small beetroot, grated
  • ½ cucumber, finely diced
  • ½ red bell pepper, finely diced (optional for colour)
  • 1 teaspoon fresh chives, chopped
  • Salt & black pepper to taste

Topping & Fun Extras:

  • 1 teaspoon sesame seeds or sunflower seeds
  • Tiny edible flowers (optional, for Easter vibes)
  • A drizzle of honey or balsamic glaze

Method:

  1. Make the cones: Brush tortillas lightly with olive oil. Roll into cone shapes (secure with a toothpick if needed). Bake at 180°C for 5–7 minutes until slightly crispy.
  2. Prepare the filling: In a bowl, mix cream cheese + feta + chives + seasoning. Fold in grated carrot, beetroot, cucumber, and optional red bell pepper.
  3. Fill the cones: Spoon the veggie-cheese mix into each cone. Sprinkle seeds on top and add edible flowers if using.
    Optional: a drizzle of honey or balsamic glaze for sweetness & shine.
  4. Serve: Arrange on a plate like a rainbow
