Happy Thirst-Day, my beautiful people!

Look at us… alive, thriving, and somehow always ready for the next plate of goodness.

I hope everyone is doing amazing today and mentally prepared—because once I show up, you already know… it’s officially time for our daily “what are we eating today?” meeting. Now let’s dive into today’s agenda.

Today’s main character is: Creamy Baked Veggie Roll-Ups.

And before anyone asks, “Where’s the meat?”—relax. Today, we are embracing our inner plant-loving citizens. We are going full vegetarian. Why? Because in this household, we respect all taste buds. Some of y’all don’t eat meat, and we are not about to be cooking separate meals like it’s a restaurant with a 12-page menu. Not today. Today, we are united. One meal. One plate. One destiny.

Who knows… by the end of this, some of you might even cross over and join the vegetarian squad.

And listen… you are going to LOVE this. I’m not saying trust me like you trust God—but trust me enough to not argue and just follow along. Deal?

Alright, come closer… let me show you how to make this deliciousness happen.

How to make Creamy Baked Veggie Roll-Ups

Ingredients:
Base:

  • 1 large eggplant (brinjal), sliced lengthwise
  • 1 small zucchini, sliced lengthwise
  • 1 tablespoon olive oil
  • Salt & black pepper

Filling:

  • ½ cup cream cheese (or thick plain yogurt)
  • ¼ cup grated cheese
  • 2 tablespoons finely chopped spinach
  • 2 tablespoons grated carrot
  • 1 tablespoon chopped onion
  • ½ teaspoon mixed herbs

Sauce:

  • ½ cup cream or milk
  • 2 tablespoons tomato sauce
  • 1 clove garlic, minced
  • Pinch of salt

Method:

  1. Roast the veggie slices: Preheat oven to 180°C. Brush eggplant and zucchini slices with olive oil, season lightly, and bake for 10–15 minutes until soft and flexible.
  2. Make the filling: Mix cream cheese, grated cheese, spinach, carrot, onion, and herbs until creamy.
  3. Roll them up: Take each veggie slice, add a spoon of filling, and roll it up gently.
  4. Make it saucy: In a small bowl, mix cream, tomato sauce, garlic, and salt.
  5. Assemble & bake: Place all roll-ups in a baking dish. Pour the sauce over them. Bake for 15–20 minutes until warm and slightly golden.
