Now, since today’s VIP is obviously… me, I figured the only reasonable thing to do was bake us a cake. Because really, who expects us to carry on eating ordinary meals when there’s a birthday to celebrate? And now, my sweet tooth has already started calling my name, so come along! Let me show you how to bake your own cake while we all celebrate my birthday together. How to make Asanda’s Honey Vanilla Berry Cake Ingredients:For the Cake: 2 cups cake flour 2 teaspoons baking powder ½ teaspoon salt ½ cup butter, softened ¾ cup sugar 3 tablespoons honey 3 eggs 1 teaspoon vanilla essence ¾ cup milk For the Berry Cream: 1 cup whipping cream 3 tablespoons icing sugar ½ teaspoon vanilla essence 1 cup mixed berries (strawberries, blueberries, raspberries) Decoration: Extra fresh berries A drizzle of honey White chocolate shavings (optional) Fresh mint leaves Method: Preheat the oven to 180°C. Grease and line two round cake tins. Whisk together the flour, baking powder, and salt. In another bowl, beat the butter, sugar, and honey until light and fluffy. Add the eggs one at a time, then stir in the vanilla. Alternately add the flour mixture and milk until a smooth batter forms. Divide the batter between the tins and bake for 25–30 minutes. Allow the cakes to cool completely. Whip the cream with the icing sugar and vanilla until soft peaks form. Fold in half of the berries. Spread the berry cream between the cake layers and over the top. Decorate with the remaining berries, honey drizzle, white chocolate shavings, and mint.
