I hope everyone is holding on tight—because this weather? Yoh, it’s not just windy, it is cold, dramatic, and blowing like it’s trying to relocate us to another province.

Now that I have officially arrived (barely, but we thank God), we can begin our very important daily food meeting.

But first—urgent announcement: please stay indoors today unless you are feeling brave enough to fight the elements. And when I say fight, I mean fight. Because this morning, I went outside to take out the trash, just doing my peaceful, law-abiding citizen duties… and guys… the wind didn’t just push me. IT BLEW ME AWAY!!!

I’m talking full “this is the end” moment. One second I’m standing, the next I’m airborne in spirit and horizontal in reality—lying flat on my stomach by the kitchen door like a defeated cartoon character.

At that point I had to ask myself: am I a human being or a plastic bag? Because the wind treated me like I weigh absolutely nothing. And honestly… the disrespect? Unmatched.

Anyway, after what happened, I was no longer in the mood for any heavy cooking. My soul said, “Keep it light.” So I listened.

And that, ladies and gentlemen, is how today’s star was born: Crunchy Fruit & Veggie Ribbon Stacks.

Fresh, simple, and gentle—because clearly, life already did the most this morning.

How to make Crunchy Fruit & Veggie Ribbon Stacks

Ingredients:

  • 1 apple
  • 1 cucumber
  • 1 carrot
  • A few strawberries
  • ½ avocado
  • 2 tablespoons plain yogurt
  • 1 teaspoon honey
  • 1 teaspoon lemon juice
  • Pinch of salt
  • Crushed nuts for topping

Method:

  1. Make the ribbons: Use a peeler to slice the apple, cucumber, and carrot into long thin ribbons.
  2. Prepare the strawberries: Slice the strawberries thinly.
  3. Make the drizzle: In a small bowl, mix:
    *Yogurt
    *Honey
    *Lemon Juice
    *Tiny pinch of salt
  4. Build the stacks: Layer the ribbons by folding them over each other in small stacks. Add little pieces of avocado and sliced strawberries between the layers.
  5. Finish it off: Drizzle the yogurt sauce over the top. Sprinkle crushed nuts over everything.

    Extra tip:
    *Chill everything before serving so it tastes extra fresh
