Happy Thirst-Day, fam!

I hope you are all doing well on this hot and sunny weather. We thank God for the sunshine!

Now that I’m here, I think we can officially call this meeting to order. Welcome to our daily food meeting, where attendance is compulsory and the only agenda item is: WHAT ARE WE EATING?!

So, let’s get straight to business.

Our star for today is none other than: Avo and Corn Pasta Rice!

We are officially on Day 2 of our avocado meals, and just like I warned you yesterday… we are not playing around! Things are about to go down in this kitchen.

I hope you enjoyed yesterday’s meal and that you are ready for today’s one because, trust me, this dish is coming with the same energy. If yesterday had you licking your plate, today might have you questioning why you didn’t make a bigger portion.

But enough talking. Before I start making you hungry for no reason, let me show you exactly how to make this deliciousness!

How to make Avo and Corn Pasta Rice

Serves: 6 as a side
Preparation time: 20 minutes
Cooking time: 30 minutes

Ingredients:

  • 2 corn cobs, husks removed
  • Salt, for boiling corn and seasoning pasta water
  • 1 C (250 ml) orzo (pasta rice)
  • 2 garlic cloves, crushed
  • 2 spring onions, sliced
  • Zest and juice of 2 lemons
  • ¼ C (60 ml) avocado or olive oil
  • 2 avocados, sliced and/or chopped
  • Handful dill
  • Salt and pepper, to taste
  • 2 C (500 ml) frozen peas, cooked
  • Handful rocket

Method:

  1. Cook the corn in salted boiling water for 5 minutes. Drain. Cook over hot coals (or on a griddle pan) for about 10 minutes, turning occasionally, until charred. Allow to cool. Slice off the kernels from the cob and set aside.
  2. Cook the orzo in salted boiling water for about 15 minutes until tender. Drain.
  3. Blitz together the garlic, half of the sliced spring onion, lemon juice (reserve the zest), oil, ½ an avocado and dill until smooth. Season the dressing with salt and pepper.
  4. Combine the orzo, corn, remaining spring onion, peas and dressing. Top with remaining avocado, lemon zest and rocket.
