Today’s main character? Chilled Chicken & Cucumber Ribbon Rolls!

Yes, today we are choosing peace… we are choosing health. Because honestly, when I woke up this morning, my soul said, “We are not doing heavy today.” Just something light, fresh, but still filling enough to hug your stomach from the inside and whisper, “I got you.”

So if you are ready to treat your body kindly without sacrificing flavour (because we don’t do suffering here), come closer… let me show you exactly how we are making this magic happen.

How to make Chilled Chicken & Cucumber Ribbon Rolls

Ingredients:

  • 1 cup cooked chicken (shredded)
  • 1 large cucumber
  • 2 tablespoons plain yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • Salt & black pepper
  • 1 tablespoon finely chopped onion (optional)

Method:

  1. Make cucumber ribbons: Use a peeler to slice the cucumber into long, thin strips. Lay them flat on a plate.
  2. Prepare the filling:
    In a bowl, mix:

    *Chicken
    *Yogurt
    *Mayonnaise
    *Lemon Juice
    *Salt & Pepper
    *Onion (if using)
    Mix until light and creamy.
  3. Roll them up: Place a small amount of filling at one end of each cucumber ribbon. Gently roll it up into a little spiral.
  4. Chill (important): Place in the fridge for about 10–15 minutes before serving.

    Extra tip:
    *Sprinkle a little black pepper or squeeze lemon on top just before serving for extra freshness
