Listen, with weather like this, nobody wants to spend three hours standing in front of the stove. We need something quick, comforting, warm, and delicious enough to make us forget Eskom, our problems, and the temperature outside. And that, my friends, is exactly how this delicious recipe was born.

How to make Creamy Sweetcorn Toast Stacks

Ingredients:

  • 4 slices bread
  • 1 cup sweetcorn
  • 2 tablespoons cream cheese
  • 2 tablespoons milk
  • ½ cup grated cheese
  • 1 teaspoon butter
  • Salt & black pepper

Method:

  1. Make the creamy corn: In a pan, melt butter. Add sweetcorn and cook for 2–3 minutes.
    Add:
    *Cream Cheese
    *Milk
    *Salt and pepper
    Stir until creamy
  2. Toast the bread: Lightly toast the bread slices until slightly crisp.
  3. Build the stacks: Spoon creamy sweetcorn onto each toast slice. Sprinkle grated cheese on top.
  4. Warm it through: Place under the oven grill (or cover in a pan) for a few minutes until the cheese melts slightly.

    Extra tip:
    *A tiny sprinkle of paprika or black pepper on top makes it taste even warmer and richer
