Happy Monday, my food fam!!! Wooohooo, it’s a brand-new Monday, a brand-new week, and a brand-new chance for new opportunities, new beginnings, and of course…new delicious things to eat! We truly thank God for this moment. Amen! Okay, so I’m here, you are here, and we both know what time it is…LET’S GET COOKING! Our star for today is none other than Corn & Cheese Cloud Pancakes! Now, wait…wait…WAIT! I already know some of you are thinking, “Hold on, haven’t we done something like this before?” And yes, you are absolutely right! Last week, we made our Herby Chickpea Clouds. BUT…this one is different. Like, really different! The moment you make these, take that first bite, and taste that delicious combination of sweet corn, cheesy goodness and fluffy cloud-like texture, you will understand exactly what I mean. And because I don’t want to keep you here all day talking about food when we could actually be MAKING it…let me show you how to make today’s star! How to make Corn & Cheese Cloud Pancakes Ingredients: 1 cup sweetcorn, drained 1 egg ½ cup plain flour ½ tsp baking powder ⅓ cup milk ½ cup grated cheddar cheese 2 tbsp chopped spring onion ½ tsp paprika ¼ tsp garlic powder Salt and black pepper 1 tbsp butter or oil for cooking Method: Add the egg and milk to a bowl and whisk together. Add the flour, baking powder, paprika, garlic powder, salt and pepper. Mix until just combined. Fold in the sweetcorn, cheddar and spring onion. Don’t overmix. Heat a little butter or oil in a non-stick pan over medium-low heat. Spoon the mixture into the pan to make small, thick pancakes. Cook for about 2–3 minutes on the first side, until golden underneath and bubbles begin appearing on top. Flip and cook another 1–2 minutes until golden and the cheese is melted. Serve warm. The little finishing touch: *Mix 2 tablespoons of plain yoghurt + a squeeze of lemon + a pinch of salt and spoon it over the pancakes.*You can also add a little chilli sauce if you want some heat.
